Ramen time! Ok so if you were not convinced by the vegetarian or the chicken ramen, I know that this one will definitely convert you into a “rameneer”. Let’s think about it for a minute shall we. So we have noodles, miso soup, loads of awesome veggies, a kick from the chilli, the freshness of the lime and most importantly the amazingly flavoured marinated steak. I’m certain that once you sink your teeth in this one you will instantly become a “rameneer”. So, go ahead, give this a go and tell me what you think!
Ingredients for 2:
2 steaks (you can choose whatever cut you like)
½ red onion
½ bunch of coriander finely chopped
1 Tsp of Kimchi
2 portions of ramen noodles
2 Tsp of miso paste
2 cups of boiling water
2 limes ( 1 ½ juiced and 1 sliced)
1 Tsp of sesame seeds
1 Tsp of rice vinegar
1 Tsp of sugar
1 garlic clove
¼ deseeded chilli
4 shiitake mushrooms
Handful of mangetouts
1 Tsp of toasted sesame oil
Handful of beansprouts
Start by making the marinade. In a pestle and mortar mix the coriander, garlic clove, rice vinegar, sesame seeds, chilli, sugar and lime juice and grind them together until your beautiful marinade looks like this.
Now pour that all over your steak and place in the fridge to rest for around 4-5 hours (if you don’t have a few hours you can just leave the steak out for 10-15 minutes and it will still taste divine)
Dilute the miso paste in 2 cups of boiling water until it become a soup and cook your ramen noodles for 5 minutes, on high heat.
Next, stir fry your mangetouts and your sliced shiitake mushrooms for 5 minutes in toasted sesame oil and cook your steak for 1-2 minutes on each side for medium rare.
When you are ready to plate, lay your noodles on the bottom of your bowl, add the miso soup, the stir fried vegetable and the medium rare steak. To garnish, grab a pinch of thinly slices red onions, coriander and kimchi. All you have to do now is grab a lime wedge and slurp away!
