Avocado & Salmon Super Salad

When I fancy eating something super quick and healthy I usually think of salads. However I have had enough of the bland “rabbit food” type to know that is not what I wanted. Everyone knows that the best bit of the salad is the dressing, but that is also what adds the calories and makes it well… less healthy. So, with that in mind I made this salad which packs loads of texture and taste without the need for dressing, so that you can enjoy this truly guilt free plate of colour.

Avocado & Salmon Super Salad

Ingredients for 2:

1 ripe avocado
100g of smoked salmon
handful of vine cherry tomatoes
1/4 pomegranate
20g of cream cheese
1 pack of Butter Head lettuce
1/4 cucumber
1/2 red onion thinly slices
juice of one lemon
2 tbsp. olive oil
pinch of salt

How to:

Halve the cherry tomatoes, slice the ½ of red onion, chop the cucumber and toss in a large salad bowl. Now de-stone the avocado, cut it in long strips and add to the mix.

For the dressing simply add salt, pepper and olive oil to the lemon juice and pour in the bowl.

You are now ready to assemble the salad by laying a bed of Butter head lettuce, adding in the content of your salad bowl and placing the smoked salmon and cream cheese nicely on top. Enjoy!
