The chicken wrap is the holy grail of quick meals and everybody just loves a good wrap, myself included! I mean what can be better than awesome, juicy, tasty goodness all tucked, nicely, into a wrap that not only you can eat with your hands, but also on the go? The only thing better than that would be ALL OF THAT, with a healthy twist on it, which means less guilt and the same amount of flavour. So with that in mind, I have taken on the challenge and created this amazing, finger-licking chicken wrap, which I’m sure will become part of your lunch and dinner repertoire.
Ingredients for 2 wraps:
1 garlic cloves
2 gherkins, thinly sliced
1 Romaine lettuce
½ red onion
3 Tsp light mayo
3 Tsp of Greek yoghurt
1 Tsp finely chopped fresh parsley
1 chicken breast
Mediterranean season sheets
1 large potato
2 Tsp olive oil
Heat the oil in a frying pan on medium heat and cook the seasoned chicken on both sides for 10 minutes.
While your meat is cooking, cut your potato into thin strips (I like mine French fries style) and shallow fry them in oil (you can use any type of oil).
Now move on to your fresh ingredients and slice them as big or as little as you like. Mine looked like this:
Once the chips are fried and the chicken breast is cooked all the way through, mix the crushed garlic into the mayo and spread it on your wrap. Next add all your ingredients one by one and finish off with a couple of dollops of parsley yogurt on top. Wrap, serve and enjoy!
