The healthy eating saga continues with this brilliantly yummalicious plate of food. This is a truly simple and wonderful plate of food that can serve as your lunch or dinner. Like you, I love chicken as well, however having chicken most days can become a little boring so I jazzed it up with some smoked bacon strips, halloumi, and the all times favourite home made guacamole. For extra fiber add some green stem broccoli and you’re off.
Makes 2 portions
2 lean chicken breasts
3 strips of bacon
8 cherry finely tomatoes
1 deseeded and finely chopped chilli
1 juiced lime
1 bunch of fresh coriander finely chopped
250 g halloumi cheese
250 g purple stem broccoli
1 nob of butter
Start by making the guacamole by peeling and de stoning the avocados. With a fork mash the avocado into a rough puree, add your chopped cherry tomatoes, the chilli, the coriander and lime juice, mix and place in the fridge for later use. Cut the bacon and the chicken into thin strips and twist the bacon around the chicken.
In a frying pan add your butter, and cook the chicken and bacon on medium heat until golden (make sure the chicken is cooked in the middle), roughly about 15- 20 min while turning regularly. When the chicken is ready cook your halloumi on each side for 2.5 mins. While your halloumi is cooking boil the purple steam broccoli on high heat for 5-7 min.
Now that all your ingredients are ready you can plate up as you wish. This recipe makes quite a bit of guacamole so you I would advise to place a stone in the middle of the guacamole and refrigerate. The stone keeps the avocado fresh for longer.
