Quinoa & Spinach Prawn Super Salad

These little grains are high in protein, fiber and do not contain gluten, which makes them one of the best superfoods of the moment. Makes 2 portions

150 g of baby spinach
200 g of uncooked king prawns
2 garlic cloves
1 bunch of coriander
2 limes juiced
1 bell pepper
1 medium sweet potato
50g halloumi cheese
7-8 cherry tomatoes
2 table spoons of olive oil
1 nob of butter
½ cup of quinoa
1 cup of water

You should start this dish by peeling your sweet potato, cut it up into small cubes and place in the oven on a roasting tray and a dash of olive oil at 200 degrees Celsius for 20-25 mins. While they are cooking, place the olive oil, prawns, garlic and the juice of one lime in a tub and refrigerate until cooking time. Next, grill your halloumi cheese until golden brown and place on the side. You can now assemble your salad by adding baby spinach, the chopped bell pepper and cherry tomatoes.

This can rest in the fridge as well until ready to serve. For the salad dressing place the coriander and the juice of one lime into a food processor and blitz until it looks like a puree. You can now turn your attention to your quinoa.

Add your ½ cup of quinoa to 1 cup of water, bring to boil, reduce the heat and cook for 10-15 mins (until the quinoa has become soft and almost see through). Cool by pouring cold water and drain thoroughly. When your sweet potato is done, place the nob of butter in a frying pan on medium to high heat, tip in your prawn along with the marinade and cook for 10 mins.

All of your ingredients are ready to be put together so grab yourself a big salad bowl and toss everything in. When you plate up add the salad dressing on top and enjoy!
