Burrito Omelette

Breakfast is the most important meal of the day so they say, however it is not always very exciting. Unless you have a good hour to spare in the morning, which I know most of us do not, it probably consists of a bowl of cereals, a power smoothie or a rushed slice of toast. That is why this recipe is the perfect breakfast option. It takes next to no time to make and gives you the fuel that you need to start your day on the right foot. And another great thing about it is that it looks like a burrito!

Makes one portion

3 free range eggs
3 sprigs of chopped spring onions
1 nob of butter
1 large peeled and chopped Portobello mushroom
1 handful of grated mature cheddar cheese
1 handful of vine cherry tomatoes

Crack your eggs in a bowl, add the spring onions and whisk until they get a bit foamy. On medium heat, place your butter and mushrooms and sauté until golden brown. Remove from heat and leave on the side. For the omelette, take a square grilled pan and add a dash of oil (this works on a regular round pan as well).

Now you can add the eggs and spring onions and leave to cook until golden underneath and cooked throughout. Remove your omelette from the heat, add the cheddar cheese and sautéed mushrooms and roll like a wrap. Cut your cherry tomatoes in half, add a pinch of salt and plate up.
