So…it is the end of the month. Pay day is fast approaching and it can’t come quicker. Whether you had a holiday, or friends around, outings, birthdays or maybe you just wanted to wine and dine throughout the month, one thing is for certain; your wage is probably gone! I too, quite often, have the tendency to do this. Especially in the last few days before pay day. And funny enough the food aspect is one that I sometimes neglect, most probably due to, perhaps lets say…buying a new pair of shoes was more important. So this is when I have to rely on creative recipes like this one. I hope you enjoy it!

Fridge Raid Cous Cous RECIPE

Makes 2 large portions

8 sundried tomatoes
100g pimento stuffed olives
150g feta cheese
2 cups of cous cous
2 gherkins
1 spicy chorizo sausage
½ tin of sweetcorn
½ tin of peas
5 sprigs of spring onion
3 roast peppers

Choose a large bowl (I normally just use my wok), or whatever you have to fit the cous cous in, then boil your kettle. Once that has boiled, pour 3 cups of water onto the cous cous, cover with a cloth and let it swell for 5-10 mins (until it absorbed all the water).

Now, chop the sundried tomatoes, pimento stuffed olives, gherkins, chorizo, spring onion, feta cheese and roast peppers and add to the cous cous. Fluff with a fork and mix in all the ingredients in. Finally, add your peas and sweetcorn and a pinch of salt and it is ready to serve.
