Spicy Popcorn Meatballs & Rice Noodles

Some days, I sort of know what I fancy for dinner, some days I don’t and other days I fancy completely random things and tastes that, sometimes, really don’t go with each other. I have been known to eat odd things at the same time, such as gherkins and chocolate buttons, all because I fancied both. So today was one of those days. I really wanted Italian meatballs and noodles. This was the perfect opportunity to get creative and make something that works in a wonderfully delicious way. And boy, did I do it! It turned out absolutely fabulous and because of that I am sharing it with all of you. So here you have it. Enjoy!

Spicy Popcorn Meatballs with Rice Noodles RECIPE

Makes 2 portions
250 g of rice noodles
1 cup of boiling water
1 large red onion
3 garlic cloves
6 tablespoons of sunflower oil
1 bell pepper
1 red chillies
300 g of minced beef
1 handful of assorted frozen veg
1 large mushroom
1 can of chopped tomatoes
1 tea spoon of dried oregano (fresh works as well)
1 tea spoon of dried basil (again, you can use fresh)

Place your saucepan on low heat and add the oil. While that is heating up chop your red onion, garlic cloves, bell pepper, chilli and mushroom. Add the onion, garlic and mushroom to the oil and cook on medium heat for around 10 min while stirring regularly. Then add your frozen vegetables and your bell pepper along with your chopped tomatoes, herbs and water and bring to boil.

Turn the heat right down, add the chillies and let it simmer for around 20-25 min, while stirring every now and again. In the meantime put your oven on at 220 degrees Celsius (mine is a fan over), and roll your minced meat into as many small balls as you can. Place the popcorn meatballs on a tray with no oil, just a pinch of salt, and place in the oven until fully cooked. Do not forget to turn them half way through. When they are done just add to your saucepan along with the rest and that is ready for serving.

When it comes to your rice noodles, in a large saucepan or wok boil the rice noodles for 5 minutes, until they are soft. Drain the noodles and wash in cold water before serving. When that is ready plate up and enjoy.
