Whenever I go food shopping I try to have a list and stick to it. Now that hardly ever happens because as soon as I get to the fresh produce section I tend to go a bit veg crazy. I am not sure if it is the colours or just the challenge of buying vegetables you do not normally cook with and see where it takes you. While staring at the courgettes I asked my boyfriend what he thought about having that for dinner. His reply was not what I expected as he said that “courgettes are like a soggy cucumbers when cooked”. Now that was the perfect opportunity to prove him wrong and cook them in such a way that he will get to love the wonderful courgette. So needless to say I bought 3 of them and devised this recipe which went down extremely well and rekindled his love for this versatile vegetable.
Makes 2 portions
8-10 chicken wings
10-12 cherry tomatoes
½ red onion
Piri piri spice mix
Sundried tomatoes spice mix
2 garlic cloves
2-3 tablespoons of sunflower oil
1 large chilli
Get your cherry tomatoes and chop them up really small along with ½ red onion. Put them together in a bowl with the juice of ½ lime and leave in the fridge until ready to serve. For the chicken wings, make your marinade by adding the oil the chilli, garlic and piri piri spice mix, coat your meat with this wonderful concoction and leave in the fridge to rest for an hour or so.
Now, take your courgettes, chop off the ends and then cut them into round shapes, making them as thick as your like. Now take your baking tray, place the courgettes neatly on it, drizzle with a dash of oil and sprinkle the sundried tomatoes mix on top. Place them in the oven at 200 degrees Celsius.
Make sure you flip them on the other side when golden brown. For the chicken wings you can either grill them or just place on another baking tray and place in the oven alongside the courgettes. Once it is done plate up and add the salsa to the dish and enjoy.
